Instructions:
- Preheat the oven to 400°F (200°C).
- Place the salmon fillets on a baking sheet lined with parchment paper.
- Drizzle olive oil over the salmon and season with garlic powder, lemon juice, salt, and pepper.
- Arrange the asparagus around the salmon on the baking sheet and drizzle with a little olive oil, salt, and pepper.
- Bake in the preheated oven for about 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
- While the salmon and asparagus are baking, rinse the quinoa under cold water.
- In a saucepan, combine the quinoa with 1 cup of water and bring to a boil.
- Reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and water is absorbed.
- Serve the baked salmon with asparagus on a plate alongside the quinoa.
