🥔🥩 Beef and Corn Stuffed Potatoes 🌽🧀

 


Ingredients:

  • 500g ground beef
  • 1 cup corn
  • 2 medium potatoes
  • 2 green onions, chopped
  • 1 red onion, diced
  • 1 large tomato, diced

Kitchen Tools Needed:

  • Air Fryer
  • Stove Top

Instructions:

  • Preheat the air fryer to 200°C (400°F).
  • Wash the potatoes and pierce them with a fork. Place them in the air fryer and cook for 10-12 minutes until tender.
  • While the potatoes are cooking, heat a skillet on the stove top over medium heat.
  • Add the diced red onion and cook until translucent, about 2-3 minutes.
  • Add the ground beef to the skillet and cook until browned, breaking it apart with a spatula, about 5 minutes.
  • Stir in the corn, chopped green onions, and diced tomato. Cook for an additional 2-3 minutes until heated through.
  • Once the potatoes are done, carefully remove them from the air fryer and cut them in half lengthwise.
  • Scoop out some of the potato flesh to create a small well, and mix it with the beef and corn mixture.
  • Stuff the beef and corn mixture into the potato halves and serve hot.
