Ingredients:
- 300g of basmati rice
- 400g of chicken breast, diced
- 1 tablespoon of olive oil
- 2 teaspoons of biryani spice mix
- 1 onion, thinly sliced
- 1 carrot, diced
- 2 cups of water
- Salt to taste
- Fresh coriander for garnish

Instructions:
- In a microwave-safe bowl, combine the basmati rice and water. Add a pinch of salt and cook in the microwave for 10 minutes or until the rice is tender.
- In another bowl, mix the diced chicken with olive oil and biryani spice mix. Let it marinate for 2-3 minutes.
- In a large bowl, add the marinated chicken and chopped onion. Microwave on high for 4-5 minutes, stirring halfway through until the chicken is cooked through.
- Once the chicken is ready, mix in the cooked rice and diced carrot. Ensure everything is well combined.
- Garnish with fresh coriander before serving.
