- 2 lbs Top-Sirloin
- 2 tbsp Olive Oil
- 1 tbsp Fresh Rosemary, chopped
- 1 tbsp Fresh Thyme, chopped
- 4 cloves Garlic, minced
- 1 tsp Salt
- 1/2 tsp Black Pepper
- 1 lb Potatoes, peeled and cubed
- 1/2 cup Heavy Cream
- 1/4 cup Butter

Instructions:
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix olive oil, rosemary, thyme, minced garlic, salt, and black pepper to create a herb paste.
- Rub the herb paste all over the top sirloin, ensuring it's evenly coated.
- Place the top sirloin in a roasting pan and roast in the oven for 25-30 minutes, or until it reaches your desired doneness.
- While the steak is roasting, boil the potatoes in a large pot of salted water until tender, about 15-20 minutes.
- Drain the potatoes and return them to the pot. Add heavy cream and butter, then mash until smooth and creamy. Season with salt to taste.
- Once the steak is done, let it rest for 10 minutes before slicing.
- Serve the sliced top sirloin with a side of garlic mashed potatoes.
