Ingredients:

  • 200g Bok Choy
  • 150g Tofu, cubed
  • 100g Shiitake Mushroom, sliced
  • 150g Shrimp, peeled and deveined
  • 2 tablespoons Soy Sauce
  • 1 tablespoon Olive Oil
  • 1 teaspoon Garlic, minced
  • 1 teaspoon Ginger, minced
  • Salt and Pepper to taste

Instructions:

  • Heat the olive oil in a large skillet over medium-high heat.
  • Add the minced garlic and ginger, sauté for about 30 seconds until fragrant.

  • Add the sliced shiitake mushrooms and shrimp, cooking until the shrimp turns pink, about 1-2 minutes.
  • Add the bok choy and soy sauce, stir-frying for another 1-2 minutes until the bok choy is wilted but still vibrant green.
  • Season with salt and pepper to taste, then serve hot.
