Ingredients:
- 300g of beef
- 200g of cherry tomatoes
- 150g of rocket leaves
- 300g of sweet potatoes
- 100g of spinach
- 1 medium onion
- 100g of lettuce
- 150g of pumpkin
- 1 jalapeno
- 2 spring onions
- 2 green chillies
- 1 cucumber
- 150g of corn
- 200g of cauliflower
- 1 capsicum
Kitchen Tools Needed:
- Oven
- Blender
- Food Processor
Instructions:
- Preheat the oven to 200°C (392°F).
- Peel and chop the sweet potatoes into cubes, then steam them until tender.
- In a food processor, pulse together the onion, jalapeno, green chillies, and spring onions until finely chopped.
- In a mixing bowl, combine the chopped beef with the blended mixture and season with salt and pepper.
- In a baking dish, layer the sweet potatoes, followed by the beef mixture, and top with chopped cherry tomatoes, corn, diced capsicum, and cauliflower florets.
- Cover the baking dish with aluminum foil and bake for 30 minutes.
- Remove the foil, add the spinach and rocket leaves, and bake for an additional 10 minutes.
- Serve the bake on a bed of lettuce, and garnish with sliced cucumber and pumpkin. Enjoy your meal!
