Ingredients:
- 250g of mixed vegetables (potatoes, carrots, peas, capsicum)
- 50g of butter
- 100g of pav (bread rolls)
- 50g of onion, finely chopped
- 30g of tomato, chopped
- 10g of ginger-garlic paste
- 15g of pav bhaji masala
- 5g of red chili powder
- Salt to taste
- Fresh coriander for garnish

Instructions:
- Boil the mixed vegetables in water until soft, then drain and set aside.
- In a blender, blend the boiled vegetables to a smooth consistency.
- In a pan on the stove, heat the butter over medium heat, add the chopped onions, and sauté until golden brown.
- Add the ginger-garlic paste and chopped tomatoes; cook until the tomatoes soften.
- Stir in the blended vegetable mixture and add pav bhaji masala, red chili powder, and salt. Mix well and cook for about 10 minutes, stirring occasionally.
- Toast the pav on the stove with some butter until golden brown.
- Serve the bhaji hot, garnished with fresh coriander, alongside the buttered pav.
