Ingredients:
- 2 Jalapenos, diced
- 3 cloves of Garlic, minced
- 200g of Ham, diced
- 300g of Chicken breast, diced
- 1 tsp of Sea Salt
- 4 Tortillas
- 2 tbsp of Vegetable Oil
- 3 tbsp of Mayonnaise
- 2 Eggs
- 100g of All Purpose Flour
- 200g of Rice, cooked
- 150ml of Milk
- 150g of Cheddar Cheese, shredded
- 30g of Butter

Instructions:
- Preheat the oven to 180°C (350°F).
- In a skillet over medium heat, add 2 tablespoons of vegetable oil and the diced chicken. Cook until browned, about 5-7 minutes. Add diced jalapenos and minced garlic, and cook for another 2 minutes until fragrant.
- In a bowl, mix the cooked rice, diced ham, mayonnaise, beaten eggs, and sea salt to combine.
- In a separate bowl, whisk together flour and milk until smooth to create a batter. Stir in cheddar cheese and set aside.
- Grease a baking dish with butter and start layering: place one tortilla at the bottom, spread a layer of the rice mixture on top, followed by the chicken mixture, and sprinkle with more cheese. Repeat the layers until all ingredients are used, finishing with a layer of tortilla.
- Pour the cheese batter over the top layer and spread it out evenly.
- Bake in the preheated oven for 25-30 minutes or until the top is golden brown and bubbly.
- Let it cool for a few minutes before slicing and serving.
