Instructions:
- Start by chopping the onions, carrots, and potatoes into bite-sized pieces.
- In a pressure cooker, heat a tablespoon of oil over medium heat on the stove top.
- Add the chopped onions to the pressure cooker and sauté until they become translucent.
- Next, add the chicken pieces to the pot, browning them on all sides for about 5-7 minutes.
- Once the chicken is browned, add the chopped carrots and potatoes to the pot.
- Pour in enough water to submerge the ingredients, and season with salt and pepper to taste.
- Close the lid of the pressure cooker and cook on high pressure for 15 minutes.
- Once cooked, allow the pressure to release naturally for about 10 minutes before manually releasing any remaining pressure.
