Dehydrated Mushrooms

 


Dehydrated mushrooms are dry shrooms whose moisture has been removed but their taste, micronutrients, and fiber remain intact. They are lightweight, keep well, and can be rehydrated simply by soaking in water. When rehydrated, they expand back to close (though not fully) their original size and chewy texture, which gives them great versatility in soups, stews stir-fries, or sauces. They are also flavor powerhouses with a concentrated umami-rich depth perfect for seasoning multiple dishes. There are several common strains, including shiitake, porcini, and morels.


 

Ingredients


  • 2 pounds mushrooms

  • Rinse the mushrooms.
  • Trim any hard stems. Slice if desired.
  • Pat mushrooms dry and place them on screens on the Nesco trays. Do not overlap.
  • Set the dehydrator to 100 F and dry for 8 hours, checking on the mushrooms after 6 hours. Thinner smaller mushrooms will dry sooner.
  • Remove when mushrooms are as dry as you want. Store in an air-tight container, such as a jar with a lid.
