🌿 Mediterranean Chicken and Veggie Bake 🍗

  

Ingredients:

  • 1 medium Onion, chopped
  • 2 cups Spinach, fresh
  • 3 cloves Garlic, minced
  • 1 medium Cucumber, diced
  • 2 stalks Celery, chopped
  • 1 medium Carrot, sliced
  • 1 Avocado, diced
  • 500g Organic Chicken, cubed
  • 100g Ham, diced
  • 1/2 cup White Wine
  • 1 cup Cherry Tomatoes, halved
  • 2 cups Cabbage, shredded
  • 2 tablespoons Olive Oil

Kitchen Tools Needed:

  • Oven
  • Blender
  • Stove Top

Instructions:

  • Preheat the oven to 200°C (400°F).
  • In a large bowl, combine the cubed organic chicken, diced ham, chopped onion, minced garlic, and olive oil. Mix well to coat the chicken and ham evenly.
  • Add the spinach, diced cucumber, chopped celery, sliced carrot, halved cherry tomatoes, and shredded cabbage to the bowl. Toss everything together until well combined.
  • Pour in the white wine and mix again to ensure all ingredients are coated with the liquid.
  • Transfer the mixture to a baking dish and spread it out evenly.
  • Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
  • While the dish is baking, prepare the avocado by dicing it and setting it aside.
  • Once the dish is done, remove it from the oven and let it cool for a few minutes before serving.
  • Top with diced avocado before serving.
