- 2 chicken breasts (about 500g)
- 1 lemon (juiced)
- 200g mushrooms (sliced)
- 2 tablespoons olive oil
- 3 cloves garlic (minced)
- Salt and pepper to taste
- Fresh parsley (for garnish)

Instructions:
- Preheat the oven to 200°C (400°F).
- In a bowl, mix the lemon juice, olive oil, minced garlic, salt, and pepper.
- Add the chicken breasts to the bowl and coat them well with the marinade. Let it sit for 10 minutes.
- In a skillet on the stove top, heat a little olive oil over medium heat and add the sliced mushrooms. Sauté until they are golden brown, about 5 minutes.
- Transfer the sautéed mushrooms to a baking dish and place the marinated chicken breasts on top.
- Pour any remaining marinade over the chicken and mushrooms.
- Bake in the preheated oven for 20 minutes or until the chicken is cooked through and reaches an internal temperature of 75°C (165°F).
- Garnish with fresh parsley before serving.
