Instructions:
- Begin by peeling and dicing the potatoes into small cubes. Boil them in salted water for about 10 minutes until tender, then drain and set aside.
- While the potatoes are boiling, chop the cauliflower into florets and add them to a large pot with water. Bring to a boil and cook for about 5 minutes until just tender. Drain and set aside.
- In a separate pan, heat a little oil over medium heat, then add the cabbages and sauté for approximately 5 minutes until they soften.
- Next, add the green peas and lima greens to the cabbage in the pan. Stir well and cook for another 5 minutes.
- Combine the boiled potatoes, cauliflower florets, and the sautéed mixture in the pot. Gently mix everything, seasoning with salt and pepper to taste. Cook for an additional 5 minutes, allowing the flavors to meld together.
- Serve the vibrant vegetable medley warm, garnished with fresh herbs if desired.
