Ingredients:
- 2 fillets of Salmon (about 200g each)
- 1 cup of Rice (uncooked)
- 2 tablespoons of Olive Oil
- 2 cloves of Garlic (minced)
- 1 teaspoon of Lemon Juice
- Salt and Pepper to taste
- 1 cup of Water

Instructions:
- Preheat the oven to 200°C (400°F).
- Rinse the rice under cold water until the water runs clear.
- In a saucepan, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté until fragrant.
- Add the rinsed rice to the saucepan and stir for 1-2 minutes.
- Pour in 1 cup of water, add salt to taste, and bring to a boil. Once boiling, reduce heat to low, cover, and simmer for 15 minutes or until rice is cooked.
- While the rice is cooking, prepare the salmon. Place the salmon fillets on a baking tray lined with parchment paper.
- Drizzle the remaining tablespoon of olive oil and lemon juice over the salmon. Season with salt and pepper.
- Bake the salmon in the preheated oven for 15-20 minutes, or until cooked through and flaky.
- Once the rice is done, fluff it with a fork and serve it alongside the baked salmon.
