Ingredients:

  • 2 fillets of Salmon (about 200g each)
  • 1 cup of Rice (uncooked)
  • 2 tablespoons of Olive Oil
  • 2 cloves of Garlic (minced)
  • 1 teaspoon of Lemon Juice
  • Salt and Pepper to taste
  • 1 cup of Water

Kitchen Tools Needed:

  • Oven
  • Stove Top

Instructions:

  • Preheat the oven to 200°C (400°F).
  • Rinse the rice under cold water until the water runs clear.
  • In a saucepan, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté until fragrant.
  • Add the rinsed rice to the saucepan and stir for 1-2 minutes.
  • Pour in 1 cup of water, add salt to taste, and bring to a boil. Once boiling, reduce heat to low, cover, and simmer for 15 minutes or until rice is cooked.
  • While the rice is cooking, prepare the salmon. Place the salmon fillets on a baking tray lined with parchment paper.
  • Drizzle the remaining tablespoon of olive oil and lemon juice over the salmon. Season with salt and pepper.
  • Bake the salmon in the preheated oven for 15-20 minutes, or until cooked through and flaky.
  • Once the rice is done, fluff it with a fork and serve it alongside the baked salmon.
