- 2 medium-sized potatoes (about 200g each)
- 1 ripe avocado (about 150g)
- 1 cup fresh salsa (about 250g)
- 1 tablespoon olive oil (about 15ml)
- Salt to taste
- Pepper to taste
- Fresh cilantro for garnish (optional)

Instructions:
- Preheat the oven to 400°F (200°C).
- Wash the potatoes thoroughly and poke several holes in them with a fork.
- Rub the potatoes with olive oil, salt, and pepper.
- Place the potatoes directly on the oven rack and bake for 45-50 minutes, or until tender.
- While the potatoes are baking, prepare the avocado by cutting it in half, removing the pit, and scooping the flesh into a bowl. Mash it with a fork and season with salt and pepper.
- Once the potatoes are done, remove them from the oven and let them cool for a few minutes.
- Cut the baked potatoes open and fluff the insides with a fork.
- Top each potato with mashed avocado and a generous spoonful of fresh salsa.
- Garnish with fresh cilantro if desired and serve immediately.
