Ingredients:
- 2 cups Shrimp
- 1 cup Chicken Stock
- 2 cloves Garlic, minced
- 1/2 cup Tomato Puree
- 1/4 cup Vegetable Oil
- 1/4 cup Mayonnaise
- 1 cup All Purpose Flour
- 1/2 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1 cup Breadcrumbs
- 1 cup Rice
- 1/2 cup Milk
- 1 Lemon, juiced
- 1 tsp Vanilla Essence
- 1 tbsp Sugar
- 4 Tortillas

Instructions:
- Preheat the oven to 375°F (190°C).
- In a pot, cook 1 cup of Rice according to package instructions using Chicken Stock instead of water for added flavor.
- In a skillet, heat 1/4 cup of Vegetable Oil over medium heat. Add minced Garlic and sauté until fragrant.
- Add Shrimp to the skillet and cook until they turn pink, about 3-4 minutes. Stir in Tomato Puree and cook for another 2 minutes.
- In a bowl, mix Mayonnaise, Milk, Lemon juice, and Vanilla Essence until smooth. Add this mixture to the skillet and stir well.
- In a separate bowl, combine All Purpose Flour, Baking Powder, Baking Soda, and Sugar. Gradually add this dry mixture to the skillet, stirring until well combined.
- Layer the cooked Rice at the bottom of a baking dish. Pour the shrimp mixture over the Rice.
- Top with Breadcrumbs and place Tortillas on top, folding them if necessary to fit.
- Bake in the preheated oven for 20-25 minutes or until the top is golden brown.
