🍤🌮 Shrimp Tortilla Bake 🧀🌶

 


Ingredients:

  • 2 cups Shrimp
  • 1 cup Chicken Stock
  • 2 cloves Garlic, minced
  • 1/2 cup Tomato Puree
  • 1/4 cup Vegetable Oil
  • 1/4 cup Mayonnaise
  • 1 cup All Purpose Flour
  • 1/2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1 cup Breadcrumbs
  • 1 cup Rice
  • 1/2 cup Milk
  • 1 Lemon, juiced
  • 1 tsp Vanilla Essence
  • 1 tbsp Sugar
  • 4 Tortillas

Kitchen Tools Needed:

  • Microwave Oven
  • Stove Top

Instructions:

  • Preheat the oven to 375°F (190°C).
  • In a pot, cook 1 cup of Rice according to package instructions using Chicken Stock instead of water for added flavor.
  • In a skillet, heat 1/4 cup of Vegetable Oil over medium heat. Add minced Garlic and sauté until fragrant.
  • Add Shrimp to the skillet and cook until they turn pink, about 3-4 minutes. Stir in Tomato Puree and cook for another 2 minutes.
  • In a bowl, mix Mayonnaise, Milk, Lemon juice, and Vanilla Essence until smooth. Add this mixture to the skillet and stir well.
  • In a separate bowl, combine All Purpose Flour, Baking Powder, Baking Soda, and Sugar. Gradually add this dry mixture to the skillet, stirring until well combined.
  • Layer the cooked Rice at the bottom of a baking dish. Pour the shrimp mixture over the Rice.
  • Top with Breadcrumbs and place Tortillas on top, folding them if necessary to fit.
  • Bake in the preheated oven for 20-25 minutes or until the top is golden brown.
