Quick Healthy Carrot Cake

Ingredients:

  • 200g of grated carrots
  • 100g of almond flour
  • 50g of honey
  • 2 eggs
  • 1 tsp of baking powder
  • 1 tsp of cinnamon
  • 50g of unsweetened applesauce
  • 30g of chopped walnuts

Instructions:

  • Preheat your oven to 180°C (350°F).
  • In a mixing bowl, combine the grated carrots, almond flour, and baking powder.
  • In another bowl, whisk together the eggs, honey, cinnamon, and applesauce until well mixed.
  • Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the chopped walnuts.
  • Pour the batter into a greased baking pan and spread evenly.
  • Bake in the preheated oven for about 20-25 minutes or until a toothpick inserted comes out clean.
