Ingredients:
- 20 fillets of Dorade Sebaste (about 150g each)
- 2 kg of seasonal vegetables (zucchini, bell peppers, asparagus, and carrots)
- 500g of cherry tomatoes
- 200ml of olive oil
- 4 cloves of garlic, minced
- 2 tablespoons of fresh thyme, chopped
- 2 tablespoons of fresh basil, chopped
- Salt and pepper to taste
- 1 lemon, sliced for garnish
Kitchen Tools Needed:
- Large baking sheet
- Mixing bowl
- Knife

- Measuring spoons

Instructions:
- Preheat the oven to 200°C (400°F).
- In a large bowl, combine the seasonal vegetables, cherry tomatoes, olive oil, minced garlic, thyme, basil, salt, and pepper. Toss well to coat the vegetables evenly.
- Spread the vegetable mixture on a large baking sheet in a single layer.
- Place the Dorade Sebaste fillets on top of the vegetables, skin side down. Season the fish with salt and pepper, and drizzle with a little olive oil.
- Bake in the preheated oven for about 25-30 minutes, or until the fish is cooked through and flakes easily with a fork.
- Remove from the oven and let it rest for a few minutes before serving.
- Garnish with lemon slices and serve the fish alongside the roasted vegetables.
